Lentil Dumplings in Soy Yogurt (Dahi Vada) Oil-Free

Ingredients:

1 cup Urad Dal (Split Black gram),

1 cup soy yogurt

1/2 cup grated ginger,

2 table spoons thinly chopped green chilies,

Grated carrots and broccoli sprouts for garnish

Procedure:

oil free vada(savory dumplings) made in the oven.

Soak urad dal(split black gram ) for 6-8 hours , grind into smooth batter using cold water

. Make sure it’s not runny but little thick. ( wet grinder works best , use Ice cold water ).

Now add little bit of ginger and green chili paste , salt to taste and little bit of baking soda and mix well.Let the batter rest for 15 minutes.

Preheat oven at 425F Place the batter in baking trays used for dough nuts . Bake for 10-12 minutes checking in between.

These vadas can be eaten with any chutney or can be made into Dahi vada. (dumplings soaked in soy yogurt)

Preparing dahi . I used soy yogurt I make at home ,for 1 cup yogurt take 3 cups water and whisk into smooth yogurt.

Now do dry thadkha /tempering with cumin seeds , mustard seeds , urad dal , curry leaves , once all these sautée well add grated ginger , thinly diced green chillis and mix this thadka in the yogurt.

Add vada in this yogurt and let them soak for 15-20 minutes. Serve them cold with broccoli sprouts and grated carrot on the top.
