Vegan Banana & chocolate chip Bread

Ingredients

● 3 very ripe bananas, mashed

● ¾ -1 cup unsweetened applesauce

● 1 cup oat flour

● ½ cup almond flour

● 3 Tbsp ground flaxseed

● 1 tsp vanilla extract

● 1 tsp baking soda

● 1 tsp baking powder

● ¼ tsp salt (optional)

● ½ cup chopped walnuts

● ⅓–½ cup vegan dark chocolate chips

Directions

1. Preheat oven to 350°F. Line a loaf pan with parchment paper.

2. Mash the ripe bananas until mostly smooth.

3. Stir in applesauce, ground flaxseed and vanilla extract. Let the mixture sit for 5–10 minutes to allow the flax to thicken.

4. In a separate bowl, combine oat flour, almond flour, baking soda, baking powder and salt.

5. Add the dry ingredients to the wet ingredients and gently mix until just combined. Avoid overmixing.

6. Fold in the walnuts and chocolate chips, reserving a few for the top.

7. Transfer the batter to the lined loaf pan and sprinkle the remaining walnuts and chocolate chips on top.

8. Bake at 350°F for approximately 40-45 minutes, or until a toothpick inserted in the center comes out mostly clean.

9. Allow the bread to cool for at least 30 minutes before slicing.

💡 Tip: Use very ripe, spotty bananas for the best natural sweetness. If you want it even more fruit-forward, you can increase the applesauce to 1 cup, but the bread will be softer and may need a few extra minutes of baking.
