Try this delicious Amla Quinoa Pulihora — simple, nourishing, and heart-healthy

🥗 Ingredients
• 1½ cup cooked quinoa
• ¼ cup grated amla
• ½ cup grated carrot
• 3 tbsp grated ginger
• 8–10 curry leaves
• 1–2 green chilies (optional)
• 2 tbsp peanuts
• 2 tbsp cashews
• 1 tsp mustard seeds
• ½ tsp turmeric
• ½ tsp methi (fenugreek) seeds
• Few dry red chilies
• Salt to taste
• 2 tbsp lemon juice
Oil option:
• Oil-free or 1 tbsp canola oil
🍳 Method
Cook quinoa and let it cool so it stays fluffy. Tempering: Heat a pan (with 1 tbsp canola oil or dry roast for oil-free). Add mustard seeds → let them splutter. Add methi seeds, dry red chilies, peanuts & cashews → sauté until lightly golden. Add curry leaves, green chilies, and ginger → stir briefly. Add grated carrot + turmeric → cook 1–2 minutes. Lower heat and add grated amla (avoid overcooking to preserve vitamin C). Add quinoa + salt → mix well. Turn off heat, add lemon juice → mix and let it rest for 10 minutes before serving.
