Zucchini&Oat Flour Brownie ( Vegan&Oil-free)

Ingredients:

3 cups of finely grated zucchini

2-1/2 cups of ground steel cut oats( blend in high speed blender to make oat flour)

2/3rd cup unsweetened cocoa powder

2 tsp baking soda

2 tsp cinnamon powder

1/4th tsp salt

1 cup unsweetened apple sauce

3/4th cup date sugar/ date paste or maple syrup or coconut sugar!

2 flax eggs ( mix 2 tablespoons of flax seed powder with 6 tablespoons of water and set aside for 10 minutes)

2 tsp vanilla extract

Procedure :

Preheat oven at 350F

In bowl combine dry ingredients, oat flour+cocoa powder +salt + cinnamon + baking soda!

In an another big bowl add apple sauce+ date syrup +vanilla extract+ flax egg and whisk well. Now add grated zucchini and mix well.

Now slowly add dry ingredients into wet ingredients and fold gently until everything is mixed well to form a thick batter!

Now pour this batter evenly in a big baking tray lined with parchment paper.

Bake at 350F for 30 minutes and let it cool off before you cut into pieces. Drizzle with little Date syrup and enjoy!

We get approximately 18-20 brownies for this measurement! We can half or double the recipe as needed!
