Sweet potato & Moringa flat bread.

Try incorporating moringa leaves when ever available,they can be used dried as well.

Moringa, commonly known as horseradish tree or drumstick tree, is a tropical plant widely known for its nutritional and medicinal qualities. A growing body of scientific evidence suggests that moringin, an isothiocyanate compound derived from moringa, may provide protection against chronic diseases, such as cancer and diabetes, and may be useful in treating the symptoms of mental disorders, such as schizophrenia or autism, especially in developing countries.

In this episode, Dr. Jed Fahey describes the health benefits associated with moringin and discusses the chemical structure differences between it and sulforaphane.

Ingredients

• 1 cup Sweet Potatoes , mashed (1 Large Sweet Potato)

• 1 cup sprouted whole wheat flour and little bit more for dusting.

• 1-2 cups of moringa leaves

• Indian spices ( turmeric, black pepper powder, red chili powder, chat masala, )

• 1 pitted medjool date

Instructions

• Wash, sweet potatoes. Place them in a pot and pour in water – just enough to cover them. Bring them to a boil and cook until soft. Or we can steam them in instant pot for 10 minutes.

• Drain the water and keep them aside to make dough in food processor.

• In food processor, with the S blade add sweet potato, moringa leaves, medjool date,spices and salt to taste ( optional) and slowly add the flour.

• Form sticky dough. Flour your work surface as well as the dough (be generous with the flour). Divide it into 8 pieces and form each piece into a round shape. Now roll out each piece until thin.

• Cook on a hot and dry frying pan for about 2 minutes (1 minute per side).

• Best served warm.

• It can be served with plant based yogurt or Indian curries like channa masala.

For these measurements we can make 8 flat breads.
