Oil free cauliflower with black eye beans curry

Ingredients *

Cauliflower 

Black-Eye beans / lobia

Onion – 1 Medium Size

Tomatoes -3

Ginger/Garlic paste ( Optional)

Curry Powder (Home made )

Turmeric powder

Chili Powder

Salt to taste

Procedure

1. Sauté onions with no oil for 2 min, add ginger garlic paste(optional), tomatoes , cook until tomatoes become soft. Add soaked black-eyed beans , salt, turmeric, chili powder , curry powder , mix thoroughly and sauté for 2 min. Add water and pressure cook.

2. In a separate  pan, sauté onion, tomato, cauliflower, add salt and cook until cauliflower pieces are tender-crisp. 

3. Add cooked beans from the step 1 and cook on low heat for 2 to 3 min

4. Garnish with coriander leaves
