Foxtail Millet Dosa (savory pancake)

Millets dosa

Millets are the most sustainable grains as they need less water to grow than most grains.

Ingredients 

3-4 cups fox tail millets 

1cup urad dal ( split black gram)

1 tablespoon fenugreek seeds

1/2 cup flattened rice ( brown rice poha)(optional)

Procedure 

Wash millets and soak them overnight, soak urad dal and fenugreek seeds for 4-5 hours and poha for 30 minutes just before grinding everything. 

Grind everything together into smooth paste , adding water . Make sure batter is not too runny . let  the batter ferment overnight.

In the morning adjust the consistency of batter if it is too thick by adding some water . save left over batter in refrigerator for 7-10 days.

Heat a flat thick bottom pan and make dosa. No need to add oil . 

add chopped vegetables, like red onion ,bell peppers, cilantro, grated carrots, micro greens,etc .

we can add potato masala for masala dosa.

Serve with flax seed chutney powder, lentil dal or vegetable chutney ,roasted channa dal and sesame seed chutney. All these recipes on the blog too.
