Blueberry Banana Muffins (Vegan & Oil free )

Ingredients to make 48 mini muffins

Dry ingredients

  • 3 cups Organic whole wheat or multigrain flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon of mix of Spices like cinnamon, clove and nutmeg powder or pumpkin spice
  • Few raw walnut pieces

Wet ingredients

  • 6 very ripe bananas
  • 1/2 cup date or coconut sugar
  • 1/2 cup apple sauce
  • 2 cups blue berries ( fresh or frozen)
  • 2 flax egg( mix 2 tablespoons of flax seed powder with 6 tablespoons of water and set aside for 15 minutes)

Procedure

Preheat oven at 350F Mix all the dry ingredients in a big bowl In a separate bowl mash the bananas and add flax egg , apple sauce and coconut sugar. Add dry ingredients into wet and slowly mix well, now add blueberries and mix by folding gently. Fill the muffin pan evenly to make 48 mini muffins Bake for 30-35 minutes and let them cook before enjoying with almond milk or any plant milk.
