carrot coconut laddoos for Deepavali.
4 cups grated carrot + 2 cups shredded coconut ( used frozen) + 2 cups date sugar( we can use date paste too) – sauté carrot for 5-6 minutes then add grated coconut and cook together for 3-4 minutes, then add date sugar and cook for few more minutes, it will all come together like halwa. Now add roughly chopped mixed nuts, elachi powder and a pinch of edible camphor. Let it cool for 10-15 minutes, then used tablespoon measure to make ladoo, roll in dry coconut powder and sprinkle some roughly chopped pistachios. Better to store in refrigerator.
