Ingredients
3 heads of romaine lettuce + 1 red onion + – 1 cup of sliced cherry tomatoes + 2 cups of air fried chick peas+ 2 Ezekiel bread slices used as croutons + 2 tablespoons pickled jalapeños, We can add avocado and diced Persian cucumber too!
Dressing(1/4th cup soy yogurt + 2 tablespoons nutritional yeast+ 2 tablespoons hemp seeds+ 1table spoon garlic powder + 1 teaspoon Italian seasoning + pinch of salt + lemon juice )or you can eyeball all the ingredients!
Procedure:
Prepare lettuce by washing it well and drying and chop into two inch pieces. Air fry chick peas at 375F for 10-12 minutes. Mix all the dressing ingredients well and keep in the refrigerator!
Take a big salad bowl and add lettuce, onions, cherry tomatoes, diced pickled jalapeños and other spices. Add roasted chick peas, toasted Ezekiel bread pieces and dressing and mix everything well. Perfect salad for summer heat!
