Chickpea Tofu Omelet

Ingredients;

*1block firm tofu ( patted dry )

*5 Tbsp. chick pea flour 

*1 Tsp baking powder 

*1/2 Tsp. turmeric 

*1/2 Tsp.-of black pepper powder 

*1/2 Tsp. kalanamak (black salt, available in most Indian stores)

*1/2 Tsp onion powder 

*1/2Tsp garlic powder 

*1 Tsp. salt

*3/4th cup plant milk 

*Thinly diced herbs ( chives, cilantro or parsley)

Instructions:

*Remove water from tofu by pressing in kitchen towel and keep it ready.

In a high speed blender add all the ingredients (except herbs, which we will be using for garnish or to top on cooked omelette )and blend until it’s smooth with no lumps and consistency like a pancake batter. 

*On a non stick pan, add a ladder full of batter and let it cook well on one side on low or medium heat, it will start forming bubbles, once it’s cooked on one side flip carefully and let it cook well on the other side too. 

*Add chives and cooked bell peppers and mushrooms and serve them hot.
