Tofu& Beetroot Burfi

A whole food plant based no oil twist to the traditional Indian sweet Burfi! Tofu will give the texture, beets and dates will give the sweetness!

Ingredients:

*2 cups grated beetroot

*1 cup organic firm tofu ( make sure to drain water completely by putting weight and dotting with kitchen towel – this will help tofu texture to look like koya)

*some plant milk to cook beet root ( 1-2 Tbs)

*2-3 Tbs crunchy almond butter

*1 cup date sugar or date paste or coconut sugar

*cardamom powder for flavor

* raw nuts and seeds powder for garnish

* rectangular Pyrex dish and parchment paper for setting

Instructions:

Heat a thick bottom pan and add grated beetroot and sauté on medium heat until water evaporates , now add plant milk and cook beetroot, then add almond butter and continuously kept mixing, after few minutes add date sugar and mix well, now add tofu by crumbling with hand, mix everything well and cook until it forms a thick ball. Now add cardamom powder as off the stove.

Set in a rectangle container to make burfi ( 1-2 inches thickness) and add chopped raw mixed nut and seeds.

Store in the refrigerator before cutting into pieces.
