Sweet Potato Sandwich (Grain-free)

Ingredients:⠀

1 large sweet potato ( try to find one which is thick and long to act as sandwich bread)
1 cup spinach ⠀
1 cup arugula ( or any greens available)⠀
1 medium avocado, sliced⠀
1 tomato, sliced⠀
1 cucumber , sliced ⠀
1/2 red onion, thinly sliced ⠀
1 cup red cabbage, thinly sliced⠀
1 fresh chilli, chopped ⠀

Pickled Jalapenos
We need to use oven for this recipe.

Instructions:

Preheat oven to 400F/200C. Line a baking sheet with parchment paper.⠀⠀

Peel the sweet potato, cut the end off and cut in thick slices. Place in the oven and bake for 25-35 minutes or until brown. Remove from the oven and let it cool. ⠀

Meanwhile, rinse all the vegetables and cut the cucumber, tomato, onion, red cabbage, avocado and chilli into thin slices.⠀

Now we will stack it like a sandwich, which means the bottom and top layers will be sweet potato and the middle section filled with all the other vegetables.
