Stuffed Okra (oil free /air-fried)

Okra is a healthy and delicious veggie, that binds to the bile acids the best remove them , there by helping in prevention of lifestyle related pre-mature degenerative diseases . 

Ingredients:

Fresh okra

Dry roasted Peanuts( we can do nut free version too, for this add more chickpea flour and coconut)

Chick pea flour 

Red chili powder 

Cumin seed powder 

Dry coconut powder or frozen fresh grated coconut 

Salt to taste

Thinly diced onion

For stuffing – I use roasted and coarsely ground peanuts + chickpea flour +red chilli powder+thinly diced onions +cumin seed powder and little bit of dry coconut powder( either dry, fresh or frozen works ) 

Mix 1 tablespoon peanut powder , 1 tablespoon chickpea flour, 1 teaspoon of red chilli powder, 3-4 tablespoons of thinly diced onion. It worked best when we mix all the above with hand , moisture from onion will help everything to hold together. 

Wash and dry fresh okra and make slit in the middle, to make room for stuffing. 

I airfried okra for 5 minutes, then stuffed them with stuffing and airfried for 10 -12 more minutes at 350F . 

These taste delicious as a snack or side dish for lunch or dinner.
