Spicy Vegetable Patties (Oil-Free)

Ingredients:

Vegetables:
8-10 medium sized potatoes (boiled and kept ready )
1 medium beetroot ( peeled and thinly diced)
1 16 oz frozen veggies mix of carrots,beans,corn and green peas.
4 green chili thinly chopped ( if you don’t like spicy food add only 1 or 2)
2 inch ginger piece thinly diced.
1 red bell pepper diced
2 -3 cups of cilantro chopped
1-2 cups of mint leaves chopped

Spices
1 tsp ginger garlic paste
1 tsp turmeric & pinch of black pepper powder
1 tsp red chili powder
1 tsp chaat masala ( available in most Indian stores )
1 tsp amchur powder ( dry mango powder)
Salt to taste ( optional)

Bread crumbs :
2 Tbsp chia seeds
2 Tbsp hemp seeds
2 slices of whole-wheat bread( toasted to make it dry)
1 Tbs of sooji (upma ravva or farina)

1-2 tablespoons of all purpose flour and water to make a thick liquid to dip patties in before rolling them in bread crumbs.

We need a non stick pan and air fryer to cook these .
We need 1/2 cup or 1/4th cup measuring cups to measure( this helps to make even patties)

Instructions:


1.Boil potatoes and keep them ready – make sure they are soft enough.
2.In a thick bottom pan cook frozen veggies on medium heat for 5-10 minutes.
3.add chopped beetroot, bell peppers, green chili, ginger, all the spices except ginger garlic paste and cook for 3-4 minutes
4.Now add peeled potato pieces and mash everything together with a potato masher or thick spoon.
5.Now add 1 tsp of ginger garlic paste and mix everything well and cook for a minute.
6.Final step in preparing veggies mix is adding greens, cilantro, and mint, mix well and off the stove.
Don’t cook after adding greens.
Let this mixture cool before making patties.

Preparing bread crumbs:
Toast bread slices to make them hard, we will grind them along with chia seeds and hemp seeds to use for bread crumbs. Mix sooji in this and keep it aside.

Making patties:
Using measuring cups take equal quantities of vegetable mix and make a round patty and round the edges, we can totally skip the coating with bread crumbs part and just heat the patty on a pan and then air fry.

If we are using bread crumbs . Make a patty as mentioned above and first dip it in the water and flour mix and with a clean hand dip in bread crumbs mix and evenly coat the patty with bread crumbs.
Repeat until all the mixture is done.
With the above measurements, if we use 1/3rd measuring cup, we will get close to 18 medium size patties .

Freeze these patties for 1 hour before cooking them.

Cooking patties:
Heat a non stick pan and cook them 5 minutes on each side on a medium heat .
Now cook these in air fryer for 8 more minutes- 4 minutes on each side.

Enjoy with garnish like micro greens, red onions, tomatoes and sugar free ketchup.
