Ingredients:
Mushrooms-3-4 cups
Onions-2 medium
Green chili’s (according to taste_
Cilantro (1 big bunch)
Curry leaves
Indian spices ( turmeric, ginger garlic paste , mustard seeds )
Ginger garlic paste (1 Tbsp)
Gravy (peanuts , cumin seeds , coriander seeds , poppy seeds )
Lemon or lime juice. (1 Tbsp)
Instructions:
1.Wash mushrooms and expose them to direct or indirect sunlight for 15-20 minutes, this will increase the vitamin D content of them.
2. Prepare gravy by dry roasting peanuts , cumin seeds , coriander seeds and poppy seeds until they release aroma , in blender make a thick smooth paste using water.
3. Heat a thick bottom pan , add some mustard seeds and curry leaves, once mustard seeds splatter add 2 cups thinly chopped onion and sauté until it is translucent.
4. Now add sliced green chili’s and a teaspoon of ginger garlic paste , cook everything together until aroma is released.
5. Now add turmeric and red chili powder and the gravy prepared. Cook all these for 4-5 minutes
6. Meanwhile fry mushrooms in a separate pan with out any oil , water will be released from mushrooms, cook 5 minutes and keep them aside.
7. Once all the gravy is cooked well add mushrooms into the gravy and cook for 5 more minutes.
8. Finish by adding a big bunch of cilantro and some lemon juice.
