Sorghum/jowar Dosa( savory flat bread)

Sorghum Dosa stuffed with broccoli micro greens, onions &flax seed spice powder
Soaked urad dal andSorghum , blend in vita mix with some ginger and green chills.

Eating a variety of grains is good for our gut microbiome.Sorghum/ jonnalu can be used to make kichidi, roti or dosa.

One of the most prominent micronutrients in sorghum is iron.One-quarter cup of sorghum contains approximately 12% of your daily recommended value. Other micronutrients found in sorghum include: potassium, niacin, thiamine, vitamin B6,phosphorus, manganese, magnesium.

Sorghum has shown to improve gut microbiome !

Ingredients:

1.jonnalu / sorghum- 2 cups

2.urad dal-1 cup

3. red rice poha 2 Tbs( optional) ( flattened brown rice or red rice)

4.Green chili’s and ginger according to taste.

Procedure:

Soak jonnalu/ shorgum and urad dal overnight.

Discard soaked water and wash them both well.

soak poha for 15-20 minutes before grinding. Grind everything in vitamix or any blender . Added some ginger and green chili while grinding.

This batter can be used with out fermentation too,but dosa tasted better and crispy after Fermentation at least for 6-8 hours.

Heat a non stick pan and rub a cut onion, to make sure Dosa will not stick. Now take a ladle full of batter and spread it in circles, starting from the center of the pan. Once Dosa cooks and starts turning golden brown on the edges add, toppings like onions, cilantro, tomatoes, some spiced flax seed powder ( recipe on our blog) and broccoli micro greens.

We can eat these dosas for breakfast, lunch or dinner.

With out adding salt these dosas tasted great as sorghum has a nice nutty flavor.

Adding ginger and green chili’s while grinding made dosas taste delicious 😋

In the vitamix it’s easy to make batter , make sure not to put too much water and also add ice cold water while making batter.

Stuffing Dosa with onions, tomatoes, ginger pieces and micro greens is a great way to get more vegetables and greens in our diet.
