Quinoa Salad Mexican Style

Delicious quinoa salad Mexican style ,

Ingredients

Black beans , corn, cilantro , cherry tomatoes, avocados, red onion , lemon juice , salt and taco seasoning( if you don’t have taco seasoning, we can use red chili powder, cumin seed powder too).

Procedure

Cook quinoa , 1:2 ratio water and let it cool completely, before making the salad.

Boiled organic canned black beans in some water for 5 minutes and drained the water and kept black beans to cool a little bit.

Used organic frozen corn and boiled them in microwave for 5 minutes and drained them too to cool for little bit.

Cut cherry tomatoes length wise and keep them aside.

Keep thinly diced red onion and cilantro too aside .

Once quinoa is completely cooled, add all the ingredients and mix well and add salt and lemon juice to taste .

For 4-5 cups of cooked quinoa , we used 2 cans of black beans , 3 cups of corn , 2 big avocados, 2 cups of cherry tomatoes, I bunch of cilantro and 1 big red onion , salt to taste , and juice of 3-4 big lemons.

Now this salad is our new favorite πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹
