Spicy Zucchini potato patties (Cutlets)

Ingredients:

• 1big grated zucchini

• 2-3 boiled potatoes

• 1 cup rice flakes ,

• 1big grated zucchini,

• 3 tablespoons mint leaves,

• 2 inches grated ginger,

• 1 teaspoon cumin seeds

• 2 tablespoons coarse peanut powder,

• 1 tablespoon red chili powder,

• 1-2 Tablespoons flax seeds powder

• 1 tablespoon turmeric powder

• 5 thinly chopped Thai chili’s.

• 1 teaspoon chat masala

Procedure:

Mash boiled potatoes and mix them with poha ( rice flakes) (soaked in water for 10-15 minutes and squeeze excess water out with hand )grated zucchini, thinly diced mint leaves grated ginger, cumin seeds , flax seed powder,thinly chopped Thai chillis, turmeric, chat masala,red chili powder, peanut powder, salt to taste. Mixing with hand helps to get even flavor.

Make small patties with hand and air fry , them 10 -15 minutes on each side at 350F. They can be baked in the oven too at 350F

These can be made ahead and refrigerated or frozen.

Tastes delicious with ketchup or cilantro&mint chutney.
