Pita Pockets w/ Tzatziki Sauce

Ingredients 

• 2 medium cucumbers peeled and diced into small pieces.

• 1 tsp cumin seed powder 

• 1 packed cup of mint leaves thinly chopped.

• 1 Tsp garlic powder 

• 1 tsp white vinegar or 1 Tbs lime/lemon juice.

• 2 cups plain unsweetened plant yogurt (I used home made soy yogurt )

• 1-2 cups water to thin the yogurt 

• 1/2 tsp ground black pepper

• Whole wheat pita bread for making pita pockets !

• Home made hummus ( recipe on our blog)

• Broccoli micro greens 

• Some diced red bell peppers and cucumbers to add in pita pockets.

• Air fried chick peas coated with spices like turmeric, red chili powder cumin seed powder and some lemon juice.

Instructions

Tzatziki sauce:

Whisk non-dairy yogurt and water into a smooth consistency, add spices and mix well. Now add thinly diced cucumbers and chopped mint, add lemon juice, and pinch of salt. 

This sauce can stay refrigerated 2-3 days.

Pita pockets: 

Warm pita bread and cut into half’s and make pocket stuff with it with all the ingredients, add the tzatziki sauce at the end to top off the pockets. 

Pita pockets are a great way to add a lot of veggies and micro greens.
