Okra& Potato Tawa Masala (oil free stir fry)

Ingredients

  • Okra – 2pounds
  • Potatoes- 4 big ones
  • Red onions- 2 big ones
  • 1 big bunch of cilantro
  • 2 Table spoons of peanut powder ( dry roast peanuts and grind them in coffee grinder)
  • 2 Tablespoons of sesame seed powder ( raw sesame seeds powdered in coffee grinder)
  • 2 tablespoons of Tawa masala ( store bought)
  • Few cumin seeds, mustard seeds and curry leaves

Instructions

  • Wash okra and let them air dry for 1-2 hours , then cut them 2-3 inch size and air fry them at 350F for 8-10 minutes.
  • Peel the potatoes and cut them into 2 inch cubes and soak them in ice cold water for 1 hour, drain the water and air fry them at 350F for 10 minutes.
  • Cut onions into 2-3 inch cubes and keep them ready,
  • Heat a big flat non stick pan, add cumin seeds, mustard seeds, curry leaves and sauté for 10-15 seconds.
  • Now add onions and sauté for 2-3 minutes and add some turmeric, and peanut and sesame seed powder.
  • Add air fried okra pieces ( make sure not to airy fry them until they are too shrunk )
  • Keeping stirring constantly on medium flame, for 3-4 minutes.
  • Now add air fried potatoes and mix everything well and sauté together.
  • Now add Tawa masala and make sure it coats all the veggies.
  • Off the stove and add thinly chopped cilantro.
