Oats & Veggies Kichidi/ Pongal/ Upma!

Instant Pot is the best for cooking Single pot dishes.. Oats are delicious eaten savory with all the delicious veggies!

2 cups organic steel cut oats, 1 cup green split moong dal, 7-8 cups water, used organic frozen veggies, tomatoes, onion, ginger, green chili, spices ( turmeric and black pepper) mustard seeds and cumin seeds. Cilantro to add at the end. Put instant pot in sauté mode and add cumin and mustard seeds, curry leaves, onions, ginger pieces, turmeric and black pepper and sauté for 2-3 minutes, then add frozen veggies and sauté for 1 more minute, then add chopped tomatoes, let them sauté for 2 more minutes. Mean while toast oats and green moong on medium heat for 3-5 minutes it releases nice aroma.

Toast oats and mung dal on low flame until nice aroma is released.

To save time mean while we can boil water on stove top. Now add toasted oats and moong dal in instant pot and add boiled water- cook on high pressure for 25 minutes. After natural release add chopped cilantro- and eat with some lemon juice sprinkled on or any vegetable chutney. We need 4-5 cups of water to cook 1 cup of steel cut oats cook well, so remember to use bigger instant pot, so not to overflow instant pot.

To reduce the calorie density of this dish I added 6 cups of veggies and 8 cups of water.
