Mushrooms Stuffed with Spinach & Tofu Curry

Mushrooms are great for reducing Inflammation and Improving Immunity!

Tofu spinach stuffing can be eaten by it self as curry too!

Stuffed mushrooms is a quick and delicious snack! Used spinach and tofu curry as stuffing!

Ingredients:

1.Organic whitemushrooms with the stem removed,washed and exposed to sun to absorb Vitamin D

2.frozen spinach microwaved for 4-5 minutes.

3.Organic Firm Tofu.

4. Indian spices ( turmeric, cumin seeds,coriander seed powder, red chili powder)

5. Flax seed powder, almond powder and nutritional yeast blended together to form a coarse powder.

6.diced red onion and green onions.

7. Pickled jalapeños

Instructions:
Keep mushrooms and spinach ready .
Heat a thick bottom pan add cumin seeds and let them spatter and add onions and green onions, sauté for 2-3 minutes and then add drained tofu by crumbling with hand, and add all the spices according to your taste.
Let everything cook for 2-3 minutes, then add microwaved spinach and cook for few few more minutes.
Stuff each mushroom with 1 pickled jalapeños slice and add fill with spinach and tofu mixture.
Now sprinkle a little bit powdered mix of nutritional yeast, almond and flax seed powder.
Air fry for 8-10 minutes at 350F.
Enjoy them warm!
