Studies have shown that fenugreek can reduce cholesterol level, especially the low density lipoprotein (LDL) which are known prevent the absorption of cholesterol and triglycerides.
Ingredients
- 3-4 cups of Methi leaves ( fenugreek)( 2 medium sized Methi bunches)
- 1 firm tofu block ( water drained using weights and paper towels)
- 1 tablespoon each of cashews and almonds( soaked in water overnight)
- 1 big onion thinly chopped
- 1 cup frozen green peas
- 4-5 green chili finely chopped
- 3 medium tomatoes finely diced
- 1 tablespoon of ginger garlic paste.
- 1/2 teaspoon garam masala
- 1 big bunch of cilantro
- Spices ( 1 teaspoon of turmeric powder, 1 teaspoon of cumin seeds, 3-4 cardamom, 2-3 cloves, 2 inches cinnamon stick
- Salt to taste.
- We need thick bottom pot and grinder to grind cashews and almonds into fine paste.( soaking them overnight makes the paste very smooth
Instructions
- Open tofu from the packet and drain all the water and put some weight on it to drain all the water. It will take 20-25 minutes to drain all the water. Wrap in a thick towel for 10 more minutes to get rid all the Water, this process makes tofu taste like paneer ( Indian cottage cheese)
- Chop all the veggies and greens thinly and keep them ready.
- Heat a thick bottom steel pot and add cumin seeds, cardamom, cinnamon stick, cloves and sauté for 30 secs, then add finely chopped green chili’s and onions, sauté these for 2-3 minutes.
- Then add 1 tablespoon of ginger garlic paste and sauté for 30 secs.
- Now add thinly chopped tomatoes and mix well and cook covered with lid for 3-4 minutes
- Add tofu cut into small cubes and mix gently into the curry ( mixing too much will break the tofu to crumble) let this cook for 2-3 minutes.
- Now add cashew & almond paste and 1/4th cup of water and add green peas, let everything cook covered for 2 minutes.
- Add thinly chopped Methi leaves and garam masala, mix everything gently and let it cook for 30 secs and off the stove.
- Add 2-3 cups thinly chopped cilantro and mix well.
