Lentils and Greens Dal (oil free)

Lentils are the best food for our gut microbiome.

Here is a simple lentils and chard recipe cooked in instant pot.

Ingredients:

2 cups lentils ( I used brown) , 2-3 medium onion, garlic , ginger , Indian spices ( turmeric, red chili powder, cumin seed powder, coriander seed powder, black pepper) curry leaves. Low-fat coconut milk or freshly ground coconut.

Procedure:

soak lentils overnight and rinse them ,Put Instant pot in a sauté mode , add thinly chopped, onions , curry leaves , garlic and ginger , sauté for 3-4 minutes and now add lentils and mix everything and let it cook for 1-2 minutes, now add Indian spices mentioned above and add thinly chopped chard leaves and tender stems too. Add 1-2 cups water and cook on high pressure for 10-12 minutes depending on the quantity. Once pressure release naturally add 1 cup of low fat coconut milk and cook for few more minutes. Serve with cooked quinoa, brown rice or millets . Squeeze some lemon while eating.
