Lemon and Lentil Quinoa with Cilantro (Oil Free)

Ingredients :

Quinoa 1 cup (soaked for 1-2 hours and rinsed well)

lemon or lime juice of 4-5 limes

cilantro(2-3 bunches thinly diced)

2-3 cups of water

Split chick peas /chanadal 1/2 cup soaked for at least 30 minutes

turmeric 1-2 teaspoons and little bit of black pepper powder

cumin seeds 1 teaspoon

mustard seeds 1 tsp

salt to taste

and 3-4 green chilies.( thinly diced according to taste)

Instructions;

Heat a thick bottom wide pan and add mustard seeds, cumin seeds and let them splutter, now add green chili, turmeric and black pepper powder, salt to taste then add 2-3 cups of water and bring it to boil, now add quinoa and split chick peas ,let everything cook well. Once quinoa absorbs water and split chick peas are cooked, add cilantro and gently mix ,then add lemon juice.
