Ingredients:

Split chickpeas(2 cups) (soaked for 1 to 2 hours),
2 Onions thinly diced
2Tbs thinly diced green chilli,
1 cup chopped cilantro,
1Tbs cumin seeds,
1-2 tsp fennel seeds,
1Tsp red pepper flakes,
3-4 cups thinly chopped Amaranth greens,
1 Tbs grated ginger,
1Tbs flaxseed powder
1 Tsp turmeric powder
2 Tbs thinly chopped curry leaves
Procedure:
- Soak Split chickpeas (channa dal) for 1-2 hours.
- Thinly dice onions, green chilies, cilantro and amaranth greens and mix all these with hand squeezing hard.
- Mix the ingredients above with cumin seeds, flax-seed powder, fennel seeds, red pepper flakes, and grated ginger using your hands. Add salt to taste
- Grind the chickpeas in a blender (without adding any water) into a coarse texture.
- Now add the ground chickpeas into the above mixture and mix everything and shape out into small balls.
- Now place these balls on a baking tray with parchment paper and press them flat
- Preheat the oven at 400 F. and place the flattened amaranth balls in the oven and bake for 10-15 minutes (until golden brown) – Check in between to make sure they dont burn
- Once they are done serve them with some tomato sauce. They taste nice and crunchy!
