Ingredients :
Whole wheat pita bread
Oil-free Pizza sauce from traderjoes
Vegetables ( bell peppers, onions tomatoes, mushrooms, pickled jalapenos )Italian spices ( basil etc
Vegan mozzarella sauce :
The recipe for the tofu mozzarella is easy:1 block of firm tofu, drained and rinsed Juice of one lemon 2 cloves garlic 1 teaspoon sea salt 1/2 cup water 4 TBS tapioca 2 TBS nutritional yeast.
Procedure:
Cut all the vegetables and keep them ready .
Layer baking tray with parchment paper and put pita bread on it,
Preheat oven at 450F Layer the pita bread with pizza sauce followed by onions , mushrooms, bell peppers, tomatoes and pickled jalapenos.
Now sprinkle some Italian spices on the veggies and put in the oven for 6-7 minutes. Whole pizza is cooking in the oven make the vegan mozzarella.
Put all the ingredients needed for the cheese in vitamix blender.
Blend at high speed until completely smooth. Then pour into a saucepan and heat on medium heat. Stir constantly until it thickens and becomes stretchy. Pour into a container right away. I spooned it onto my pizza. It will melt when you bake the pizza crust.
Now take the pizza out and put the cheese on the top and bake again for 7-10 minutes keeping an eye on the oven .
Add fresh basil leaves on the pizza and let it cool before you cut into triangles and enjoy.
