Snake guard chutney or Potlakayi Perugu Pachhadi

The important health benefits of snake gourd include its ability to reduce fever, detoxify the body, improve digestion, increase hydration, strengthen the immune system, manages diabetes, improve strength and quality of the hair, and aid in weight loss.

Ingredients

  • 2-3 cups chopped snake gourd Potlakai or Pdalangai
  • 1/2 teaspoon of fenugreek seeds
  • ¼ teaspoon Turmeric powder
  • ½ Teaspoon cumin seeds
  • 1/2 Teaspoon of mustard seeds
  • 1/2 teaspoons each of Channa dal and urad dal
  • Few curry leaves
  • Other Ingredients:
  • 6-8 green chili
  • 1 inch of ginger
  • 1 to 1½ cup of plant yogurt
  • 1 cup of water
  • 1 medium red onion finely chopped
  • 1 teaspoon of tamarind paste
  • Required Salt
  • 1 Tablespoon finely chopped coriander

Instructions

  • Peel the skin of snake gourd by using a spoon and chop to small pieces
  • Heat a thick bottom pan and add fenugreek seeds and dry roast them on medium flame and add, cumin seeds, mustard seeds, Channa dal, urad dal and roast them for 1-2 minutes
  • Now add curry leaves and snake guard pieces, turmeric and mix well, and cook with lid on fir 3-4 minutes.
  • Meanwhile grind green chili’s and ginger into coarse paste and add this paste in the pan and cook along with everything for 1-2 minutes.The pieces should not become too soft. turn off the heat.
  • Let the mixture become completely cool.
  • Meanwhile, beat yogurt till it is smooth adding water.
  • Now mix together snake guard pieces mixture along with yoghurt and chopped onions. Adjust salt.
  • Garnish with finely chopped coriander and onion pieces and serve with hot quinoa, brown rice, roti etc.
