Raw Vegan Brownies!
Ingredients:-1.5 cups raw walnuts-1 cup raw almonds -2.5 cups pitted dates-3/4 cup cacao powder 1 tbsp. flax seed powder -1/4 tsp. sea salt-2 tbsp. cacao nibs for topping (optional)
Instructions:-
Combine 1 cup walnuts and the almonds in a food processor and process until finely ground-Add cacao powder ,flax seed powder and sea salt next and combine, transfer to a bowl to set aside-Add the dates to the food processor and process until smooth (small bits may remain that’s okay!) remove them from processor and set aside-Add the nut and cacao mixture back into processor and process again adding small handfuls of date paste as you go-Process until a dough like consistency is achieved, the dough should hold together when squeezed in your hand-Add brownie mixture to an 8×8 pan or dish lined with parchment paper, press down and evenly distribute batter into pan, add remainder of walnuts on top with cacao nibs if you desire!-Chill in the fridge or freezer for 10-20 min before cutting into squares, I like to top it with some pink sea salt for extra flavor-These can be stored in the fridge in an airtight container for 3-4 days… if you haven’t eaten them all already!!
