Raw Vegan Brownies!
Ingredients:
-1.5 cups raw walnuts
-1 cup of raw almonds
-2.5 cups pitted dates
-3/4 cup cacao powder
-1/4 tsp sea salt
-2 tbsp cacao nibs for topping (optional)
– pure vanilla extract.
Method:
-Combine 1 cup walnuts and the almonds in a food processor and process until finely ground
-Add cacao powder and sea salt next and combine, transfer to a bowl to set aside
-Add the dates to the food processor and process until smooth (small bits may remain that’s okay!) remove them from the processor and set aside
-Add the nut and cacao mixture back into processor and process again adding small handfuls of date paste as you go, now you can add vanilla extract.
-Process until a dough-like consistency is achieved, the dough should hold together when squeezed in your hand
-Add the brownie mixture to an 8×8 pan or dish lined with parchment paper, press down and evenly distribute batter into the pan, add remainder of walnuts on top with cacao nibs if you desire!
-Chill in the fridge or freezer for 10-20 min before cutting into squares, I like to top it with some pink sea salt for extra flavor
-These can be stored in the fridge in an airtight container for 3-4 days… if you haven’t eaten them all already!! Enjoy 😊
