1.Boil whole grain pasta according to instructions on the package and keep it ready.
2.Prepare veggies and greens and keep them ready
- Make a thick milk with cashews and hemp seeds in a high speed blender and keep it aside. ( almonds or other nuts and seeds can be replaced with cashews)
- In a thick bottom pan sauté garlic, add green onions,regular onions,mushrooms and carrots, and cook for 4-5 minutes, add turmeric, red chilli powder and mix well
- Now add broccoli, red bell peppers,cherry tomatoes and cooked pasta and mix everything well.
- Add cashew and hemp milk and cook for 2-3 more minutes
- Add chopped kale and little bit of garam masala and mix everything well and cover with lid and off the stove.
It’s delicious served warm.
