Cranberry Pickle ( with Indian Spices)

Cranberry chutney/ pickle – oil free Cranberry chutney/ relish.

Ingredients:

1.4-5 cups of cranberries washed and blotted dry. ( make sure there is no water and completely dry )

2. 1 cup garlic chopped into small pieces

3. 1/2 cup red chili powder

4.1 cup roasted sesame seed powder

5. 1/4th cup mustard seed powder

6.2Tbs fenugreek powder

7.2 Tbs cumin seed powder and 2 Tbs of roasted coriander seed powder.

8. 1 Tbs turmeric powder

9.1/4th teaspoon black pepper powder

10. Juice of 3-4 limes and Flax seed powder ( mixed in the chutney just before eating)Salt to taste, it’s better to add just before serving to reduce salt consumption. It’s better to store it in refrigerator as we are not adding oil or lot salt like other pickles. We can add lemon zest too for added health benefits and taste.

Instructions:

Prepare cranberries by washing them and drying thoroughly. Cut them into half or we can use chopper to cut into small pieces. Mix all the above ingredients in cranberries . Store them in the refrigerator in an airtight container ( glass mason jars are best) Just before serving, we can mix 1 -2 teaspoons of flax seed powder to 3 Tbs of the chutney. To control the salt content, sprinkle tiny bit of salt just before serving ( optional )
