Ingredients:
Bittergourds 6-8
1tablespoon tamarind paste
1tsp, turmeric,
1tsp red chilli powder
2 red onions thinly diced
1-2 tablespoons sesame seed powder
1 tablespoons peanut or almond powder
salt to taste,
2 Tbs curry leaves,
1Tsp mustard seeds,
1 Tsp cumin seeds
Big bunch cilantro leaves thinly chopped to add at end.
Procedure:
- Clean the bittergourd and peel the hard outer bumps and make a slit/opening in the middle, length wise with a knife.
- Marinate the bittergourd in tamarind juice along with some salt, turmeric, and red chilli powder (adding some vegan yogurt is also optional)
- Cook the marinated bittergourd until the water evaporates (checking in between)
- Let them cool before you remove the seeds from the bittergourd.
- Now, airfry these at 375 F for 10-15 min (check in between)
- Stuff these airfryed bittergourds with a mixture of thinly diced onions, and mix of spices like red chilli powder, sesame seed powder, and either peanut or almond powder, (or with the flax seed powder recipe on our blog)
- Now air fry these stuffed bitter gourds 3-4 minutes and keep them aside.
- For stir fry, heat a thick bottom pan and add some mustard seeds, cumin seeds, thinly diced red onions, and curry leaves and dry roast all of these for 2-3 minutes. Add the stuffed bittergourds into the pan
- Cook all of these for 3-4 minutes and enjoy them with Quinoa or brown rice. They look like fried fish!
