Cashew & hemp seeds stuffed mushrooms!

Easy stuffed mushroom recipe!

Ingredients:

Mushrooms, raw cashews, hemp seeds, red onions, cilantro, nutritional yeast, green chili, non salt Italian seasoning, fresh garlic cloves, black pepper powder, pickled jalapeños, 1/4 cup whole wheat bread crumbs

Procedure;

Wash Mushrooms well and remove the stems, air fry the mushrooms for 5-6 minutes at 375 to remove some moisture.

Prepare the stuffing: coarsely grind 1/4th cup cashews,,1/4th cup hemp seeds, and mix 1/4 cup nutritional yeast, Italian seasoning, black pepper powder to your taste. Keep this mix aside and sauté diced mushroom stalks, diced red onion, 2 tablespoons diced garlic cloves and green chili in a thick bottom pan for 5-6 minutes, then add the above nut & spice mix to this along with diced cilantro, bread crumbs and diced pickled jalapeños ( add according to your spice level)

Now fill the mushrooms (which were sir fried for 5 minutes ) with the above mixture and air fry or bake at 375 F for 6-8 minutes checking at 5minute mark.

This is great appetizer which can be prepared ahead and heated before serving!

Tip: to remove excess moisture from mushrooms, air fry them for 5 minutes with hallow center facing down.
