Black beans & Vegan Mozzarella stuffed Mini Peppers

Ingredients :

10-15 mini multicolored sweet peppers

Black beans- 1 can

Vegan mozzarella cheese (home made)

Pickled jalapeños

Store bought fat free salsa ( Trader Joe’s has them)

Instructions :

1.Slit sweet peppers in the middle to just open them and air fry them for 4-5 minutes.

2.Drain the canned black beans and pickled jalapeños and keep them aside.

3.Fill the sweet peppers with 1 sliced jalapeño and 1-2 teaspoons of black beans and 1/2 teaspoons of salsa.

4.Add 1 -2 teaspoons of home made mozzarella cheese on each sweet pepper and bake for 20 minutes at 350F, we can bake them in air fryer too, but it will take less time in air fryer.

5.Let them cool little bit before enjoying!

Ingredients

Vegan Mozzarella Recipe:

½ cup raw cashews, soaked overnight or minimum soaked 1 hour in hot water

1 cup unsweetened almond milk

3 ½ tablespoons Tapioca starch / flour

2 tablespoons nutritional yeast

1 teaspoon lemon juice or apple cider vinegar

½ teaspoon salt

½ teaspoon garlic powder

¼ teaspoon smoked paprika

Instructions :

Blend all the above ingredients and transfer to a pan and keep stirring it around till the cheese thickens and becomes stretchy.

We have to stir continuously, with a whisk, if not it will form lumps. ( around 8-10 minutes is enough)

We can store this cheese in the refrigerator for 4-5 days.
