Ingredients
Sweet potatoes ( I took both orange and Japanese variety )approximately 4-5
Tomatoes 4-5
Onions 1-2
Cilantro- big bunch
Ginger-1-2 tablespoons
Garlic-4-5 cloves
Green chillis to taste
Salt to taste
Thadkha( urad dal , mustard seeds , methi seeds etc)
Chili powder and turmeric.
In a big pan add , thadkha and sauté make sure it’s not burning as we are not adding any oil , now add onions and sauté, at this point you can add little salt . Add chopped tomatoes, garlic and green chili. Then add turmeric , red chili powder. Let everything cook for 5 minutes with lid on. Now add sliced sweet potatoes with skin on. And mix everything. In 10 minutes everything will be cooked nicely . Now add tamarind juice according to taste . If you want you can add a teaspoon of coconut sugar or date sugar ( optional ) . Finish the dish with thinly diced cilantro and garlic and off the stove.
