Dry ingredients:
• 11/3 cup (120 g) oat flour made from steel cut oats
• 1/3 cup date sugar
• 1/2 cup (50 g) unsweetened cocoa powder
• 1 tsp baking powder
• 1/4 tsp baking soda
• 1/4 tsp salt
• 1/2 cup (90 g) dark chocolate chips(dairy-free) + more for the top
Wet ingredients:
• 3/4 cup soy milk
• 2/3 cup applesauce unsweetened
• 1/4 cup peanut butter
• 1 tbsp apple cider vinegar
• 1 tsp vanilla extract
. 1 flax egg ( 1 tbs flax seed meal + 2.5 tablespoons water)
Procedure:Mix dry ingredients and wet ingredients well separately, then combine well line muffin cups in the tray and fill them with batter Add few chocolate chips on each muffin cup before baking. Bake at 360F for 25 minutes. With the above measurements we will get 8-10 muffins!
