Spicy Vegetable Fried rice with Brown rice! ( Vegan & Oil free)
Ingredients:
• 3 cups left over brown rice
• 10-12 cloves of garlic
• 2-3 inches of ginger
• 6-8 carrots
• 2 medium green bell peppers
• 1cup green peas
• Cilantro
• 2 tablespoons of soy sauce+ 1 tablespoon of date syrup + few red pepper flakes
• 1 tablespoon of almond butter( optional)
• 6-8 green/ red chili’s
Instructions:
• 1 tablespoon each of cashews and peanuts.
1. I used left over brown rice that was refrigerated if you don’t have it ready Cook the rice and let it cool down afterwards. Once the rice has cooled down, transfer it from the cooking pot into a bowl and put it in the fridge to sit over night.
2. Add the chopped garlic, onion, green chili and diced carrots to a non-stick frying pan. Cook them over high heat for 2-3 minutes and add 1 tablespoon of almond butter,this will melt when it touches the hot pan,and give nice taste and aroma. We can make with out almond butter too!
3. Add bell peppers and green peas and cook for an additional 2-3 minutes and add the sauce mix and let it cook for a minute.
4. Add the rice and Stir it in properly and cook for an additional 2-3 minutes or until the rice is hot. Do not overcook the rice.
5. Add thinly chopped cilantro and mix well.
6. Enjoy your vegan no-fry “fried” rice!
Garnish with spring onions and pan roasted cashews and peanuts!
