Whole grains, lentils, veggies and greens with Indian spices in a single Dish!
Ingredients:
1 cup brown rice ( soak overnight)
1 cup red lentils ( soak for 1 hour)
Vegetables:
Frozen moringa pods-8-10
Frozen green beans-2 cups
Okra-8-10
Carrots-5-6
4-5 tomatoes
2inch ginger piece
Daikon radish (medium size 1)
3 cups thinly chopped kale
1 big bunch cilantro
Thadakha- mustard seeds and curry leaves and turmeric, black pepper powder.
Sambar masala ( used my moms )You can use any store bought one.
Tamarind pulp- 3 tablespoons.
2-3 tablespoons raw cashew pieces.
Instructions:
Soak brown rice overnight, next day wash and cook this along with soaked red lentils in instant pot in manual high pressure for 25 minutes. ( 7-8 cups of water for 1 cup rice and 1 cup lentils)
While rice and lentils are cooking in instant pot, heat a thick bottom pan and add mustard seeds, curry leaves, sauté them and add diced onions, moringa pods ( mulakkayi) carrots and sauté for 2-3 minutes, now slowly add rest of the veggies and let everything cook in medium heat.
Mix 4-5 Tablespoons of sambar masala in 2 cups of water and mix well with out lumps and add this in veggies along with tamarind pulp.
Once rice and lentil mix cook in instant pot, add this in the veggies and mix all together.
Add chopped kale,cilantro,raw-cashews and mix well and off the stove.
Mom’s Sambar Masala Recipe-
1 cup Channa dal
1 cup cumin seeds
1 cup mustard seeds
1 cup dhaniya seeds
15 -20 dry red chilli
1 cup urad dal
3 table spoons pepper corns
3 tea spoons fenugreek Greek seeds
Heat all these in a thick bottom pan on very low heat for 10-15 minutes until
Aromatic released and slight change of color
After it cools completely, then grind by adding some turmeric and asafetida powder.
