Quinoa Bisibelebath (Made with Red Lentils)

Quinoa bisibelebath is an easy and delicious one pot dish that includes a lots veggies, greens, spices , whole grains and lentils .

Ingredients:

1 cup red lentils ( soaked for at least an hour)*

2 cups of quinoa ( rinsed ) *

1 teaspoon mustard seeds and 1 teaspoon cumin seeds*

1/2 cup curry leaves*

1 -2 medium onion, thinly sliced*

8-10 cups mixed vegetables(carrots green-peas,drumsticks ( moringa pods) and bell pepper(capsicum)) and 2-3 cups greens thinly chopped ( I used power greens salad mix)*

1-2 tablespoons tamarind extract(extracted by soaking lemon sized tamarind)*

3-4 tablespoon bisibelli bath masala *

1 teaspoon turmeric and pinch of black pepper powder.*

1 teaspoon red chili powder *

1 teaspoon date sugar(optional)*

Salt to taste ( optional)*

5-6 cups water*

2 tablespoon coriander leaves (cilantro)

Instructions:

Chop all the vegetables and onion. Keep aside. Soak tamarind in warm water. Extract pulp and keep aside.* Heat thick bottom large pan and once it is hot add mustard seeds, curry leaves ,asafetida & let it splutter.* Add onions, curry leaves and drum sticks Sauté for 2-3 minutes until they Add mix vegetables and cook for another 1-2 minutes.* Cook red lentils in instant pot with 1:3 water ratio for 15 minutes at high pressure and keep it ready , similarly cook quinoa according to directions on the packet and keep it ready . * Once all the veggies are cooked to fork tender, add bisibelli bath masala mixed in water and add it.* Now add tamarind juice too. * Then add dal(lentils),quinoa, water salt to taste and give a stir and let everything cook well together for 5 more minutes. * Now add thinly chopped greens and mix well and cook for 2-3 minutes.* For Tempering: Do dry tadka by adding mustard seeds curry leaves, hing ,red chilies let it splutter. Add peanuts or cashews fry until browned. Add the tadka to quinoa bisibelebath and mix well.* Serve hot with a side of lemon and slices of raw red onions.
