๐ฅ Ingredients
3โ4 cups kale (chopped & massaged with orange juice + pinch of salt) 3 cups purple cabbage (shredded) 1 ยฝ cups carrots (shredded) ยพ cup edamame (steamed) 4โ5 mandarin oranges (peeled) 1 avocado (diced) ยผ cup dried cranberries 1 Tbsp walnuts (crushed) 1 Tbsp pumpkin seeds 1 Tbsp sunflower seeds 1 cup cooked quinoa (cooled)
๐ Dressing
ยผ cup fresh orange juice ยผ cup apple cider vinegar (optional) 1 Tbsp crushed black pepper Pinch of dried Italian herbs (oregano, basil, thyme) Salt to taste
๐ฉโ๐ณ Method
1๏ธโฃ Cook quinoa & let cool.
2๏ธโฃ Massage kale with orange juice + salt for 2โ3 mins until tender.
3๏ธโฃ Add all veggies, fruits, seeds, avocado & quinoa to a large bowl.
4๏ธโฃ Whisk dressing ingredients, pour over salad & toss well.
5๏ธโฃ Serve fresh & enjoy the crunch + citrus burst! ๐

Lovely, but I’ll always take mine with more cabbage than kale! Nothing against kale, I just LOVE cabbage!
