Ingredients:
1 cup barnyard millets soaked overnight.
Vegetables- carrots, onions, green chili, curry leaves, ginger pieces all diced into small pieces, 1-1/2 cup of frozen peas.We can add more veggies like bell peppers and tomatoes too!
For 1 cup of millets take at least 2-3 cups of veggies.
Ingredients for thadakha- mustard seeds, cumin seeds, urad dal and Channa dal
Procedure:
Wash the soaked millets well and cook them with 2 cups of water for 1 cup millets until itβs cooke 75%, it takes 8-10 minutes on medium flame.
In a thick bottom pan, add thadakha ingredients and sautΓ© them for 2-3 minutes, then add all the chopped veggies and cook them for 6-8 minutes, now add cooked barnyard millet and cook everything together for few more minutes. Add some cilantro and lemon juice and off the stove.
We can add few cashews or peanuts for garnish.
Salt to taste is optional, we can add more lemon juice if avoiding salt.
