
Idlis with no rice (steamed lentil cakes)

This is great recipe for Diabetics, it may help with controlling blood sugar levels.
Ingredients:
1 cup urad dal,1 cup moong dal, water, grated vegetables like carrot, zucchini cilantro ginger, green chillis.

Makes 18-20 idlis
Soak 1 cup urad dal(black gram ) and 1 cup yellow split moong dal for 4-6 hours. (we can use these lentils with the skin too)
Grind these lentils in a blender with little water till the batter is thick and fluffy.
Keep it in a warm place to ferment for about 8-10 hours. (fermentation is the key)
Add salt( can skip) and mix or fold the batter gently.
Steam the idlis in medium heat to make them fluffy.
Optional additions – grated carrots, cilantro and grated ginger,cilantro ,zuchhini,green chillis.
These taste the best dipped in spicy coconut or peanut chutney.
Note * No rice added. 😋
