Ingredients:
Carrots 3 cups grated
Beets 3 cups grated
Date sugar 1 cup
Dry unsweetened coconut 1 cup
Cardamom pods 2-
3Plant milk 1 cup
Roasted nuts ( dry roasted pistachios, almonds , walnuts and powdered into coarse mixture) 1 cup and little bit coating on ladoos
Procedure:
1.Peel carrots and beetroot and shred them in food processor. Dry roast nuts and blend them into coarse powder In a thick bottom pan saute shredded carrot and beetroot on a low flame Adding 1 cup plant milk after 10-15 min add dry coconut and mix everything and cook for 10 more minutes Now add roasted nut powder And mix everything and add date sugar . Saute for 5 more minutes and off the stove and put a lid on it.Once the carrot and beetroot mixture cools off make ladoo with hand pressing evenly and roll them first in nut powder and then in coconut powder. Freeze them for at least 2 hours for everything to bind well. It’s better to store them in freezer in summer weather .
