Ingredients
• 1 bunch fresh kale leaves, (or 3-4cups chopped kale, slightly packed)
• 3 cups of shredded purple cabbage
• 1-1/2 cup of shredded carrots
• 3/4th cup edamame beans (steamed )
• 4-5 small mandarin oranges (peeled )
• 1 large avocado ( diced into 1 inch pieces )
• 1/4 cup dried cranberries
• 1 Tbsp crushed walnuts
• 1 Tbsp pumpkin seeds
• 1 Tbsp sunflower seeds
• 1/2 cup orange juice for massaging kale
• 1/4th teaspoon of salt for massaging kale
Orange juice Dressing Ingredients
• 1/4 cup orange juice (juice from 2 oranges)
• 1/4 cup of apple cider vinegar ( optional)
• Dried Italian spices ( oregano, basil, etc)
• 1 tablespoon of crushed black pepper
• Salt according to taste.
Instructions:
Cook quinoa according to the instructions on the packet!
Let quinoa cool down before adding in the salad.
Wash and tear the kale leaves and remove the thick stem.
Add the 1/2 cup orange juice and 1/4th tsp salt to the bowl with kale and massage for 2-3 minutes. This help to tenderize kale and adds flavor too.
In a big bowl add all the salad ingredients, and prepare orange juice dressing.
In a medium size bowl add all the ingredients mentioned for the orange juice dressing and mix well.
Add this dressing to the salad and mix well before serving!
