Ingredients
- 2 bunches of kale ( don’t use the ribs , just leaves )
- A teaspoon of Freshly ground mustard seeds to put on the kale once baked .
- To make the spice rub to put on kale leaves, we need ingredients 4-11
- 1/2 cup nutritional yeast
- 1/2 pumpkin seeds ( sunflower seeds , or cashews can be used too)( soak pumpkin seeds in water for 10-15 minutes)
- 1 teaspoon turmeric, 1/4th teaspoon pepper powder
- 1 tablespoon red chili powder
- 4-5 garlic cloves
- Roasted red pepper-1 big one
- 4-5 dates ( we can use less too)
- 1 -2 teaspoons smoked paprika
Instructions
Put all the above ingredients from number 4-11 in a blender and make a spice rub.
Wash and remove kale leaves from the ribs and break them with hands and massage them with 1-2 teaspoons of apple cider vinegar. Now coat these kale leaves with above spice rub and bake them at 325 F for 30-35 minutes checking in between. Now sprinkle 1 teaspoon of freshly ground mustard seed powder on the cooked kale .
Adding mustard seed powder activates myrosinaze enzyme in kale and increases sulphoraphane content in it.
Tips : To make them Crispy apply Less spice rub.
Increase or decrease chilli powder depending on your spice level .
